Something I never do, because good lord, who is interested in recipes any more than anyone is interested in dreams or other people's horoscopes, but the pie was SO delicious I thought I'd share.

Filling

Five or six wings and legs of chicken (yes, don't really do measurements)

two leeks, slicked quite thinly

twelve button mushrooms

one large onion

Fry the onion and leeks gently in a good dollop of olive oil until soft and fragrant. Add salt and pepper to taste. Add the mushrooms until they are slightly wilted. Remove from the pan.

In the same pan melt a large knob of butter, then add a tablespoon of flour, and mix quickly – brown the roux for about 30 seconds making sure it doesn't catch on a lowish flame. Gradually start to add milk, stirring all the time until you have a white sauce the consistency of double cream. Taste and add more seasoning—black pepper and salt—to taste.

Cook the chicken in the microwave or over. Cool and remove all the flesh – add the flesh to the vegetable mixture then mix the whole lot together. Put the mixture into pie dish.

roll out, brush with beaten egg, make a hole in the centre or add a pie funnel. Bake for about 20 mins until the pastry is golden and fluffy. scoff till groaning.

This does sound good. We don't really cook with leeks, but I do like the taste of them, so maybe I'll buy some and give this a shot!

I never used to cook with them, but I've found that they go so well with anything that needs onions, it changes the taste so beautifully--that I generally use them all of the time when something calls for onions.

Poor Over! Can't you leave the old buffer to snooze, instead of stuffing chicken in and expecting him to cook it?

I like recipes. Never cooked much til I got together with Dr. Sweetie, but being the vegetarian in the household, I had to become the chef because she learned All-American cooking from her mom: "Take a piece of meat and cook something with it." I've found I kind of like it, and I suspect if I substituted portobello shrooms for the chicken, this would be delicious. Thanks!

It would be - but we can't get quorn in Canada and most available meat substitutes are disappointing. It's an ongoing annoyance... and until my significant otter is up to visiting her mom, no visits to the States on the agenda.

On the other hand, mushrooms are a year-round crop--I've seen varieties fresh that I never even heard of, mostly at the Asian market.
